Through a literature review, this study aimed to analyze the digestive pathophysiology, diagnostic methods, and therapeutic approaches for celiac disease. This autoimmune disorder, triggered by gluten ingestion in genetically susceptible individuals, results in chronic enteropathy with villous atrophy. The investigation covered gastrointestinal clinical manifestations, diagnostic confirmation (based on serology, histology, and selectively, genetics), and treatment modalities. Early diagnosis was shown to be imperative to mitigate systemic complications, including hematological, osteometabolic, and neurological deficiencies, as well as oncogenic risk. The primary therapeutic approach is strict adherence to a gluten-free diet, with nutritional supplementation when necessary. It was concluded that early detection and a multidisciplinary approach are essential for effective management, aiming to minimize sequelae and improve prognosis and quality of life.
